Bread (without yeast and flour)

Ingredients

150g fine oats

135g Sunflowerseed

90g Linseed, Flaxseeds, shredded if possible

65g Hazelnuts grounded

2 tbls Chia seeds

4 tbls Fleeseed shells

1½ tsp Sea salt

1 tbsp Maple syrup

3 tbsp Coconut oil fluid

4,5 dl Water

And that's how you do it:

Start preparing the dough in the evening because it will turn out best if you leave the dough to rest a minimum of 4-5 hours.

Use baking paper or use coconut oil to prevent bread from sticking to the form. I use a 20cm cake form.

1. Add all dry ingredients in a big enough bowl. Stir it all well.

2. Mix 3 table spoons of good Qualität Coconut oil with 1 tablespoon Maple syrup (or other choices) in 4,5 dl water.

Add all the dry ingredients with the water/coconut oil mix. Mix it really well until you have a dough. Not too dry, not too wet. If they dough falls apart it is too dry.

You can always add some of the dry ingredients if it gets too moist. Press it firmly, cover it with a towel and let it rest in the bowl 4-5 hours min. or overnight. Before baking you place the dough in the baking form and again press it firm. You can still add some water if you think the dough got a bit dry over night.

Baking:

Preheat oven to 180C

add some water on the surface of the bread. (Spray bottle or brush).

Bake bread for 30min. 180C in the middle of the oven.

Take it out after 30 Minutes, add a bit water to the surface again. (Spray bottle or brush) and bake the bread another 30 min. without the form.

Take the bread out of the oven and let it cool off before you cut it.

The recipe can be varied any way you choose. After you've done it once, you can exchange stuff or add: flakes, seeds, nuts, herbs, anything you like.

Tip:

Instead of Maple syrup you can use Honey, Coconut syrup, Birnel or Xylitol.
